Elsie Widdowson

Elsie Widdowson (Oct. 21, 1906 - June 14, 2000) was an English nutritionist who developed—with Robert McCance—the British austerity diet for rationed food during WWII. They also were the first to advocate for food fortification with vitamins and minerals. (Image source: wikipedia.org)
