Ellen Swallow, c. 1864
Ellen Swallow Richards (Dec. 3, 1842 - Mar. 30, 1911) was a chemist and the first woman admitted to the Massachusetts Institute of Technology. Richards pioneered using science to better daily life, as well as the use of chemistry to test foods for nutritional components, and to test both food and water for contaminants.
